I confess to a point of ignorance in my otherwise obsessive food knowledge: I don't understand mangoes. Normally I stay away from mango because I find them fibrous, or just not very good. Not long ago I had a couple of mangoes that were amazing, brilliantly flavorful, and soft yet firm like some kind of gelatin but not fibrous at all.
