emerald_griffin and I made mini-pizzas using plain English muffins, spaghetti sauce, mozzarella, and mushrooms. They were pretty good but we need to find the perfect mini-pizza recipe. Possibly drizzling extra virgin olive oil on the muffins before we put them in the oven? Must remember to investigate further.
